Like jazz hands mixed with the Carlton dance excited. Isn’t that quite the visual?
I don’t know what it is, but I effing love tater tots. These golden fried potato gems just melt my heart. I swear I have a healthy relationship with food, but for some reason, I am completely smitten with tater tots.
Of all the fried side foods, tater tots rule for several reasons: 1) they stay crunchy unlike french fries. I swear if you don’t eat french fries in the first thirty seconds of being served they turn into major soggy town. 2) tater tots accumulate the correct ratio of dipping sauce to fried potato, which makes for easier eating. 3) tater tots are much sturdier when ingredients are piled high.
Well, have I convinced you to join the tater tot bandwagon?
If not, then today’s recipe might just put you over the edge. Seriously, this may be my favorite tater tot recipe of all time. There’s nothing better then perfectly golden cubes topped with chili, cheese, guacamole, pico de gallo, jalapenos, sour cream, and more cheese. I could eat these totchos for breakfast (slap an egg on it), lunch or dinner.

Ultimate Sweet Potato Totchos with Chipotle Aioli
Yield: Serves 4
Prep Time: 10 minutes
Cook Time: 25 minutes
Ingredients:
1 bag frozen sweet potato tater tots
1 cup prepared chili
1 1/2 cups cheddar cheese, shredded
Sour cream, garnish
Red onion, diced, garnish
Guacamole, garnish
Pico de gallo, garnish
for the chipotle aioli:
1 cup mayonnaise
1 tablespoon chipotle adobo sauce
Directions:
Preheat oven to 425 degrees. Place tater tots on the baking sheet and bake for about 25 minutes or until golden brown. Remove from oven. Pour chili and cheese on top of tater tots. Place back in the oven for at least five minutes or until cheese has melted and the chili has warmed through. Remove from oven and garnish with sour cream, red onion, guacamole, pico de gallo, and chipotle aioli. for the chipotle aioli:
In a bowl, combine ingredients.

I had no idea they had sweet potato tater tots! Obviously haven’t swung by the freezer isle for a while. Have you tried Crispy Crowns?? They’re half the size of tater tots and wicked crispy! Pinning this for sure.
